Wanna try something new this weekend? This recipe is a family favorite! Actually, 4 out of 5 of us LOVE them, which is a pretty good odds in our family. This recipe is super easy to whip together – Bonus! So easy, that I’m not limited to making them only on the weekends. I regularly make them during the week before school. 2c whole wheat flour 2c grass fed buttermilk 4 tbsp of ghee (or butter – I use KerryGold) 2 tsp baking powder 1 tsp baking soda 1 tsp salt 3 tbsp of maple syrup, add more to make batter thinner 1/2 c applesauce (heaping/overflowing) Warm a frying pan over medium-high heat or set a griddle to 375 degrees. Mix everything together in a large bowl. Use about 1/3 cup of batter for each pancake and brown for 3-4 minutes on each side. Serve hot with powdered sugar, honey, or a good quality maple syrup. Enjoy! Not only do I love these pancakes because they taste so delicious, but I love that there is NO white sugar and that using whole wheat flour doesn’t effect the taste. Healthy Pancakes? Yes! For me, doing something new always shifts my energy. It’s so nice to gain fresh perspective by doing something as simple as trying a new recipe, especially one that’s good for you!
